1 cup coconut milk
1 cup half and half, plus alittle extra if needed
1/2 cup minute tapioca
1/3 cup honey
2 teaspoons grated lime zest
1/3 cup dried cranberries
2 firm bananas
Combine coconut milk, half and half in a sauce pan, sprinkle the tapioca on top and whisk bring to a boil stirring, reduce heat and boil 1 minute
Remove from the heat, stir in the honey lime zest and cranberries. It should be soft and creamy, adding more half and half if needed
With the pudding at room temperature, add the peeled and sliced the bananas, making sure to coat the bananas well.
Refrigerate until cold.
